The process

How an engagement works.

Every engagement follows the same structure. You know what to expect at each step — and nothing moves forward without your sign-off.

01

Initial conversation

We start with a conversation — not a pitch.

You describe what's going on in your restaurant: the systems you use, the problems you're running into, and what you've already tried. We ask questions. There's no commitment at this stage — the goal is to understand whether there's a fit and what an engagement might look like.

You leave with a clear sense of whether this is the right next step.

02

Intake and system inventory

We document what you have before we look at anything.

If the initial conversation points toward an engagement, we collect a structured profile of your restaurant: the systems you use, who has access to what, and what records are available. This becomes the onboarding register — the foundation for everything that follows.

We have a verified picture of your systems, access, and starting point.

03

Start gate

Nothing starts until the required items are verified.

Before any audit work begins, we confirm that the access, records, and scope are in place. Required items are verified or explicitly waived. This step exists because an engagement that starts without the right access produces findings that can't be acted on.

The engagement has a clean, verified starting point.

04

Initial control review

We find where your systems disagree — and rank what matters.

We audit your existing systems across the relevant areas: POS, accounting, purchasing, payroll, cost, and operations. Every finding is scored and ranked by dollars and risk — not percentage. A 69.9% soup is less important than $37,456 of purchases no recipe touches. The findings are documented before any changes are made.

You receive a prioritized findings summary ranked by dollars, risk, and control failure.

05

Owner approval

You decide what gets corrected — and in what order.

The findings are reviewed with you. You approve which causes to correct, in what sequence, and within what scope. Nothing is implemented without your explicit sign-off. If the scope changes, we discuss it before any work proceeds.

A bounded set of approved corrections with defined scope and ownership.

06

Correction and verification

Approved changes are made — and read back.

We work through the approved scope in sequence. Every change is made in the live system and then re-read after it's made — not just saved. The result and the evidence are recorded. A task is finished only when the evidence has been re-read after the change, not when the change was made.

A delivery record: what changed, what it produced, and how it was verified.

07

Owner control brief

You get a clear picture of where things stand.

After each cycle, you receive an owner control brief: open exceptions, verified fixes, and next decisions. Monthly management reviews catch variances before they compound. Controls are re-scored on a cadence — not just when something goes wrong. The work doesn't disappear when the engagement ends.

Your operation stays on track without requiring you to manage every detail yourself.

A few things that don't change.

Nothing moves without your approval

Every proposed change is reviewed and approved before implementation. You're never handed a finished product you didn't agree to.

Scope is defined before work begins

We agree on what's included before anything starts. If the scope changes, we discuss it — no surprises on the invoice.

Every change is read back after it's made

A task is finished only when the evidence has been re-read after the change, not when the change was made. A save that silently drops its data is caught only because it was re-read.

Confidentiality is standard

Your financial data, operational details, and business information are handled with discretion. We don't discuss client engagements.
